Ingredients:
1 head of cauliflower
4 oz cream cheese (softened & cubed)
1 1/2 cups shredded cheddar cheese or cheese blend
1/2 cup heavy cream
4 slices bacon, cooked & chopped (reserve grease)
1 diced jalapeno
2 Tbsp warm water (if needed)
1/4 tsp red pepper flakes (optional)
salt and pepper
- Rinse and chop cauliflower. In a microwave-safe bowl cover cauliflower with cellophane cook 8 mins. Carefully remove and pull cellophane back to bent cauliflower after steaming in the microwave.
- Cook bacon. Remove from pan. Add butter to bacon grease and saute jalapenos, 2-3 mins. Add cream cheese until melted. Add heavy cream, cheddar cheese, salt and pepper, red pepper flakes if desired, and about 1/3 of the chopped cooked bacon. Once combined pour over cauliflower. (If it’s too thick add the 2 Tbsp warm water to thin)
- Top with rest of bacon, chives, parsley, or desired toppings.
