Ingredients:
2 boneless skinless chicken breast
2 (8oz) packages of cream cheese, chopped into cubes
1 package of Ranch seasoning dressing mix
8 slices of bacon, cooked and chopped
4 cups chicken stock
2 cups fresh spinach (optional)
green onions (optional)
1 Tbsp of hot sauce, I used Cholula
1 1/2 cups shredded cheddar cheese, I used white and yellow blend
Instructions:
- Place chicken breasts, cream cheese, ranch dressing mix, chicken broth and half the bacon in a slow cooker. Cook on low about 6 to 8 hours.
- Remove chicken when cooked through and shredded in a separate bowl with two forks. Return to slow cooker.
- Stir in shredded cheese, hot sauce, and spinach then cook for another 5-10 minutes.
- Top with desired toppings such as bacon and green onions. I like to add fresh parsley. Try adding mushrooms or broccoli to soup if desired. Want it spicy? Add jalapeno peppers.
