Ingredients
1 lb Regular Sausage (add a few dashes of red pepper flakes if desired)
1 head of cauliflower
1/2 diced onion
1 Tbsp minced garlic
1 diced jalapeno
2 quarts chicken broth
2 sliced cooked bacon
4 cups fresh spinach
1 1/2 cups heavy cream
Directions
1. Brown sausage. Remove and set aside.
2. Wash & chop cauliflower into small pieces. Place cauliflower and 1 Tbsp of water in a microwave-safe bowl cover with plastic wrap and cook in the microwave for 5 minutes. Set aside and let vent. Be careful uncovering, steam is HOT.
3. In a large pot, saute the diced onion until clear, add garlic and cook at a for about a minute.
4. Add chicken broth, cauliflower, bacon, and sausage and cook at a simmer for 15 minutes.
5. Add heavy cream and spinach, and simmer for 5-10 minutes. Add any salt, pepper or seasonings of choice at this step. 6. Enjoy or store in the fridge for up to about 5 days.
* I added diced green onion and sliced spinach on top of my individual bowl.
